Συνεργασίες και συμπυραγωγές. Saison du Buff

Πριν κάμποσο καιρό, η συνεργασία δυο ζυθοποιών σε μια μπύρα ήταν και σπάνια και άξια ιδιαίτερης συζήτησης. Τελευταία, δεν περνά βδομάδα που να μην παρουσιαστεί μια τέτοια συνεργασία, ακόμα και μεταξύ μεγάλων ονομάτων. Μπορεί να μην ξέρουμε πως και γιατί ξεκίνησαν αυτές οι συνεργασίες, αλλά φαίνεται πως έχουν πλέον καθιερωθεί, δημιουργώντας μάλιστα μια δυναμική στο χώρο.

Κάποιες φορές οι συνεργασίες ξεκινούν από ανάγκη, με ένα τέτοιο παράδειγμα την περίπτωση των Avery και Russian River. Οι δυο ζυθοποιίες είχαν φτιάξει το 2004 δυο Belgian Style Ale στις οποίες είχαν δώσει συμπτωματικά το ίδιο όνομα – “Salvation”. Παρά να τρέχουν δικαστικά για το ποιος θα κρατήσει το όνομα, οι δυο ζυθοποιοί συναντήθηκαν και μετά από μερικές μπυρίτσες αποφάσισαν ν’ αναμίξουν τις δυο μπύρες τους, φτιάχνοντας μια μπύρα συνεργασίας, στην οποία μάλιστα έδωσαν και το εύστοχο όνομα “Collaboration, Not Litigation”

Κάποιες άλλες φορές, τέτοιες συνεργασίες προκύπτουν από την διάθεση κάποιων ζυθοποιών να ανταλλάξουν ιδέες και τεχνικές, προσπαθώντας να φτιάξουν κάτι το πολύ εξειδικευμένο. Χαρακτηριστικό παράδειγμα η περσινή συνεργασία της Samuel Adams με την Weihenstephaner. Οι δυο μεγάλες ζυθοποιίες θέλησαν να συνδυάσουν την πολλών ετών τεχνογνωσία της Γερμανικής σχολής με την φαντασία και την ευρηματικότητα της αμερικανικής craft σκηνής, για την παραγωγή ενός νέου είδους μπύρας στα περιορισμένα όμως πλαίσια του παλαιού γερμανικού «Νόμου περί Καθαρότητας της Μπύρας». Αποτέλεσμα αυτής της συνεργασίας, η “Infinium”, μια champagne style μπύρα αποκλειστικά από βύνη, λυκίσκο, μαγιά και νερό, που κυκλοφόρησε πριν μερικούς μήνες.

Υπάρχουν κι οι μπύρες που προκύπτουν απ’ την συνεργασία ταλαντούχων homebrewers ή μικροζυθοποιών, που είτε δεν έχουν δική τους ζυθοποιία είτε αυτή είναι πολύ μικρή και δεν τους επιτρέπει να εκφράσουν την πληθωρικότητά τους και να υλοποιήσουν τις πολυάριθμες ιδέες τους. Κλασσικά τέτοια παραδείγματα είναι οι μικροί ευρωπαίοι ζυθοποιοί Urbain Couteau (De Struise), Menno Olivier (De Molen) και Mikkel Bijergso (Mikkeller).

Αν και οι μεν De Struise έφτιαξαν φέτος δικιά τους μικροζυθοποιία στο Oostvleteren (Βέλγιο), οι δε De Molen είναι σε φάση μετεγκατάστασης σε μια μεγαλύτερη ζυθοποιία, ο Mikkel επιμένει να ζυθοποιεί από εδώ και από εκεί, είτε νοικιάζοντας ξένες εγκαταστάσεις για κάποιες μέρες, είτε συνεργαζόμενος με άλλες ζυθοποιίες, πειραματιζόμενος τόσο σε νέα στυλ όσο και σε παραλλαγές υλικών στις ίδιες συνταγές, δίνοντας με την μεγάλη του μάλιστα παραγωγικότητα (37 νέες μπύρες το 2010) μια νέα διάσταση στο θέμα Collaboration Beers.

Κάποιες φορές, μπύρες συνεργασίας δημιουργούνται για εορταστικούς ή επετειακούς λόγους. Παράδειγμα οι πρόσφατες συνεργασίες της Sierra Nevada με τους ιστορικά πρωτοπόρους της Αμερικανικής Craft σκηνής - τις Pioneer Series - για τον εορτασμό των 30 χρόνων της ζυθοποιίας (για τη συνεργασία αυτή αφιερώσαμε ένα ειδικό άρθρο εδώ)


Από τις πάμπολλες συνεργασίες που έγιναν τα τελευταία χρόνια, κάποιες προέκυψαν από την ανάμιξη ήδη πετυχημένων μπυρών, οπότε και απασχόλησαν ιδιαίτερα τους φίλους της μπύρας. Τέτοιες συμπαραγωγές ήταν οι:

  • De Struise & De Molen – Black Damnation: Μίξη της Black Albert και της Hell & Damanation (δηλαδή της Hel & Verdoemenis)
  • BrewDog & Mikkeller – I hardcore you: Μίξη της “Hardcore IPA” και της “I Beet You”
  • De Molen & Flying Dog – Bat out of Hell: Μίξη της “Hel & Verdoemenis” και της “Gonzo”
  • Mikkeller / BrewDog / Nogne O - Black Tokyo Horizon: Μίξη των “Black”, “Tokyo” και “Dark Horizon” 

Ο λόγος όμως που παρακινεί τις περισσότερες συνεργασίες στις μέρες μας, είναι η διάθεση των ζυθοποιών ν΄ ανταλλάξουν ιδέες και τεχνικές, να δοκιμάσουν, να πάρουν ρίσκα, και τέλος να επικοινωνήσουν δημιουργώντας κάτι το πρωτοποριακό, μαζί με ανθρώπους που εκτιμούν, θαυμάζουν και σέβονται.

Isabelle ProximusΜια πολύ σημαντική συνεργασία, η οποία άνοιξε το δρόμο και για πολλές επόμενες, ήταν αυτή του 2006, μεταξύ των Tomme Arthur (Port Brewing/Lost Abbey), Vinnie Cilurzo (Russian River), Rob Tod (Allagash), Adam Avery (Avery) και Sam Calagione (Dogfish Head).
Όταν ο Calagione αποφάσισε να ταξιδέψει στο Βέλγιο, για τις ανάγκες ενός βιβλίου που έγραφε τότε, κάλεσε και τα παραπάνω “φιλαράκια του”, από τους πιο δημιουργικούς και πρωτοποριακούς μικροζυθοποιούς δηλαδή της αμερικανικής craft beer σκηνής, να κάνουν το ταξίδι αυτό μαζί του. 


Έτσι κι έγινε! Όλοι μαζί επισκέφθηκαν τις κλασσικές lambiceries και κάπου μεταξύ ξεναγήσεων και δοκιμών έπεσε κι η ιδέα… Όταν γυρίσουν στην Αμερική να φτιάξουν όλοι μαζί μια “ξινόμπυρα”. Έτσι γενήθηκε η ομάδα Brett Pack και η μπύρα που πράγματι έφτιαξαν όλοι μαζί και η οποία ωρίμασε σε βαρέλια που είχε φέρει ο καθένας, με τη δικιά του μαγιά, αναμίχθηκαν για να φτιάξουν την Isabelle Proximus. signature aleΓια κάποιους, οι συνεργασίες έχουν πλέον μπει για τα καλά στο πρόγραμμα.
Στην βελγική De Proef για παράδειγμα, ο Dirk Naudts συνεργάζεται από το 2007, κάθε χρόνο και με άλλον γνωστό αμερικανό ζυθοποιό (Lost Abbey, Allagash, Bell’s, Terrapin), για την σειρά “Signature series - Brewmaster’s Collaboration”.
 
Η Dogfish Head και οι Three Floyds έχουν επίσης να επιδείξουν αρκετές συνεργασίες. Η Stone πάλι, έχει ξεκινήσει από τα μέσα του 2008, μια σειρά από τριπλές συνεργασίες, προσκαλώντας δύο διαφορετικούς ζυθοποιούς κάθε φορά. Αυτές οι συνεργασίες (οκτώ τον αριθμό ως τώρα) κορυφώθηκαν με τέσσερεις νέες μπύρες μέσα στο 2010, μια απ’ τις οποίες σας παρουσιάζω στη συνέχεια. Αρκετές μάλιστα απ’ τις συνεργασίες αυτές επαναλαμβάνονται, στην ζυθοποιία του δεύτερου και του τρίτου.


Dogfish Head / Victory / Stone – Saison du Buff


Πριν από κάποια χρόνια, ο Sam Calagione της Dogfish Head, ο Bill Covaleski της Victory Brewing και ο Greg Koch της Stone, τρεις ρομαντικοί μικροζυθοποιοί, με κοινές απόψεις και όραμα για το προς τα πού πρέπει να κινηθεί η craft σκηνή στο μέλλον, αποφάσισαν να κάνουν ένα κοινό βήμα για να ευαισθητοποιήσουν όπως πίστευαν την κοινή γνώμη. Δημιούργησαν έτσι τους Β.U.F.F. (Brewers United for the Freedom of Flavor).



Στην συνέντευξη τύπου που κάλεσαν, εμφανίστηκε ένας άνθρωπος και κανένας δημοσιογράφος. Αυτό δεν τους αποθάρρυνε να κάνουν ένα πάρτυ και απλά ν’ ακολουθήσουν οι ίδιοι τις αρχές του «κινήματος» που θέλησαν να ξεκινήσουν. Ν’ απελευθερώσουν δηλαδή τη μπύρα που φτιάχνουν από τυποποιημένες συνταγές, συνηθισμένα υλικά και περιχαρακωμένα στυλ. Μπορεί η συνέντευξη τύπου να ήταν μια παταγώδης αποτυχία, αλλά το μήνυμα τους βρήκε πρόσφορο έδαφος σε πολλούς νέους ζυθοποιούς και αντικατοπτρίζεται στις μπύρες της νέας εποχής.

Στα πλαίσια των συνεργασιών που έχει ξεκινήσει η Stone Brewing από το 2008, ήρθε η ώρα και για την BUFF να δώσει το δικό της στίγμα, με την συμπαραγωγή μιας πολύ ιδιαίτερης μπύρας. Μιας saison με προσθήκη ασυνήθιστων μυρωδικών, όπως μαϊντανού, φασκόμηλου, δενδρολίβανου και θυμαριού!


Για να δούμε όμως τι έφτιαξαν τα παλικάρια…

Σερβίρω τη Saison du B.U.F.F. στους 6 περίπου βαθμούς στο όμορφο flute της Stone. Χρώμα ξανθό, φωτεινό, ολίγον ομιχλώδες. Η παρουσία του ανθρακικού έντονη και ο κατάλευκος αφρός, γεμίζει πλούσιος και φουσκωτός το ποτήρι μου. Θα υποχωρήσει σιγά σιγά, αφήνοντας πλούσια, κρεμώδη ίχνη στο ποτήρι και σχηματίζοντας λοφάκια στο στρώμα που απομένει.

Το άρωμά της εξίσου πληθωρικό αλλά και περίπλοκο. Ολόκληρος ο αγρός και το μποστάνι στο ποτήρι μου. Λυκίσκος, πορτοκάλι, αλλά και θυμάρι και φασκόμηλο αναδύονται με ένταση.
Στο στόμα βγαίνει σπιρτόζα, με έντονο τσίμπημα της γλώσσας στην αρχή, για να καλμάρει και να ισορροπήσει αργότερα. Στη γεύση είναι ασυνήθιστη, ακόμα και για saison, με τα μυρωδικά να εμποτίζουν την παλέτα.

Τα malts δένουν αρκετά πετυχημένα τις διαφορετικές γεύσεις μεταξύ τους, συμβάλλοντας σε μια δροσιστική κι ευκολόπιοτη μπύρα, περίεργη στην αρχή αλλά αρκετά απολαυστική μόλις τη συνηθίσεις και αποδεχτείς τη διαφορετικότητά της. Γι αυτή και μόνο τη διαφορετικότητά της, αξίζει να τη δοκιμάσει κάποιος αν την πετύχει πουθενά, μια και δεν σχεδιάζεται να επανακυκλοφορήσει.

Βαθμολογώ με 8.5 την αιθέρια εμφάνιση, με 8.5 το ιδιαίτερο και περίπλοκο άρωμα, με 7.5 την όχι και τόσο δεμένη γεύση και 7.5 την γενικότερη αίσθηση. Σύνολο: 8 στα 10

Dogfish Head / Victory / Stone Saison du BUFF homebrew recipe

Is this a complete guide to homebrewing? No way. Is it a recipe you can use alongside such a guide? Absolutely.

Yield: 5 gallons (about fifty-four 12-ounce bottles or thirty 22-ounce bottles)
4 pounds, 15.8 ounces crushed German pilsner malt
4 pounds, 15.4 ounces crushed North American two-row pale malt
1 pound, 14.6 ounces crushed wheat malt
10.2 ounces flaked rye
About 9 gallons plus 4 cups water
0.58 ounce Centennial hops (9.8% alpha acid)
1/2 teaspoon Irish moss
2.58 ounces Amarillo hops (8.5% alpha acid)
0.24 ounce fresh parsley
0.09 ounce fresh rosemary
0.09 ounce fresh lemon thyme
0.04 ounce fresh white sage
1 (125 ml) package Wyeast Labs WY3711 French Saison Yeast
0.77 ounce Citra hops (11.0% alpha acid)
1 cup plus 3 tablespoons light dried malt extract
I can’t stress it enough: clean and sanitize everything.

Mashing
In a 10-gallon brew kettle, combine the crushed malts and flaked rye with 4 gallons of 163°F water. The water should cool slightly when mixed with the grain. Cover and hold the mash at 149°F for 2 hours.
For safety’s sake, set up your propane burner outside. Set the brew kettle of mash on top and heat to 160°F, stirring frequently to avoid scorching. Turn off the heat. The mash will continue to increase in temperature to about 165°F.

Lautering and Sparging
After mashing is complete, carefully transfer the mash to the lauter tun to separate the liquid (the wort) from the grains. Run a length of vinyl tubing from the lauter tun to the brew kettle. Let the first few quarts of liquid run through. It will be cloudy and contain some undesirable particulates. Once the liquid coming through is clear, stop the flow and pour the cloudy liquid back into the lauter tun, where the husks from the crushed grain will act as a natural filter and help remove the sediment.
Allow the remainder of the wort to drain into the brew kettle at a slow, steady rate, restricting the flow with a plastic crimp on the tube. Once the liquid is lower than the level of the grain bed, begin the sparge by slowly sprinkling 5 gallons plus 1 cup of 168°F water over the grains.
The sparge water, which should never exceed 170°F, is added to the grain and allowed to drain off at a slow rate (regulated by the plastic crimp), extracting the remaining sugars and maximizing yield. This is not a step to be rushed; be prepared to spend at least an hour on lautering and sparging. Once the last of the sparge water has filtered through the grains and the flow from the lauter tun stops, you’re ready to begin the boil.

The Boil
Set the brew kettle of wort on your outdoor propane burner and add water to bring the wort level up to about 6 gallons plus 12 cups, if needed. Bring the wort to a rapid, rolling boil. As it begins to come to a boil, a layer of foam and scum may develop at the surface. Skim it off and discard. Once the wort is at a full boil, put a hops bag containing the Centennial hops in the kettle and set a timer for 90 minutes. Stir the wort frequently during the boil, and be watchful to avoid boilovers.
At 15 minutes before the end of the boil, stir in the Irish moss. When the boiling time is over, turn off the heat and put a hops bag containing the Amarillo hops, parsley, rosemary, lemon thyme, and white sage in the kettle. Cover the kettle and immediately begin cooling the wort quickly. Place the brew kettle in a large sink, bathtub, or cooler partially filled with ice water. Place your sanitized wort chiller in the wort and run cold water through it until the wort comes down to 70°F.

Pitching the Yeast and Fermentation
Once the wort has cooled to 70°F, discard the spent hops and herbs and check the specific gravity of the wort with a hydrometer. The target starting gravity is 1.059 (14.5 Plato).
The yeast should be removed from the refrigerator about 2 hours before use so it acclimates to room temperature. Slowly pour the cooled wort into a sanitized primary fermentation bucket. Stir vigorously with a sanitized spoon or carefully shake the fermenter (sealed of course) for about 10 minutes to aerate the wort. Shake the container of yeast, add it directly to the wort, and stir vigorously to combine. Cover the bucket with the lid, fitted with the proper stopper and an airlock filled halfway with water. Place the bucket in a cool, dark place and keep it at 70°F.

Signs of primary fermentation should be evident after about 6 to 12 hours. Let the wort ferment until the bubbles coming from the airlock have slowed to a rate of about one per minute. This can take anywhere from 4 days to over 1 week.
Once this occurs, it’s time to transfer the beer to a (sanitized) glass carboy for secondary fermentation. Attach a length of (sanitized) vinyl tubing to the (sanitized) racking cane, and carefully siphon the wort into the carboy, being careful to leave behind the sediment at the bottom of the plastic fermenter. The vinyl tubing should extend to the bottom of the carboy to prevent splashing. While oxygen is crucial for the yeast at the beginning of fermentation, after that you want to minimize the wort’s exposure to it.

Dry Hopping
Put the Citra hops in a hops bag and place it in the carboy. Seal the carboy with the drilled stopper and an airlock filled halfway with water and ferment at 70°F. After 7 days, dry hopping is complete. Remove the hops bag and discard the hops. Check the specific gravity of the beer. If it’s reached the target final gravity of 1.007 (1.8 Plato), it’s ready to bottle. If not, allow it to continue fermenting at 70°F until it reaches the target.

Bottling
When you’re ready to bottle, be sure to clean and sanitize the bottles, caps, bottling wand, racking cane, and tubing. Put the dried malt extract in a medium saucepan and stir in just enough water to dissolve it. Bring the mixture to a boil over high heat. Remove from the heat, cover, and let cool slightly. Pour this mixture into a clean, sanitized bucket with a spigot. Attach a length of vinyl tubing to the racking cane and carefully siphon the beer into the bucket, being careful to leave behind the sediment at the bottom of the carboy. The vinyl tubing should extend to the bottom of the bucket to prevent splashing.
Remove the racking cane and attach the bottling wand to one end of the vinyl tubing and the other to the spigot at the bottom of the bucket. Open the spigot
and begin filling the bottles, leaving about 1 inch of headspace in each bottle. Once the bottles have been filled, cap them using a bottle capper (or simply close the tops if you’re using swing-top style bottles). Store properly in a cool, dry place for 2 weeks so the beer can properly carbonate.

  1. Νικο απιστευτη παρουσιαση...!!! Η εισαγωγη σχετικα με τις διάφορες συνεργασιες ολα τα λεφτα!!! Οσο για την Saison du B.U.F.F. αρκετα καλη μπυριτσα φαινεται και θα ηταν πολυ ενδιαφερον να εβρισκες και τις "βρασιες" της Dogfish Head & της Victory για να δεις διαφορές...

  3. Εγώ θα σχολιάσω παλι τις καταπληκτικές φωτογραφίες και κυρίως το "εκπληκτικό" κατ'εμέ ποτήρι με τους λυκίσκους ... Τί ποτήρι !! Απίστευτο !!
    Πάντως ποτέ ως τώρα δε μου είχε δημιουργηθεί η επιθυμία να δοκιμάσω αυτή τη μπύρα ... Τώρα.. κάτι σα να γίνεται!
